Now that December has begun it’s officially holiday party season! We celebrate both Christmas and Chanukah in my family, so as the month rolls on the parties keep coming and by this time next month I’ll feel like I’ve gained twice the holiday weight you’re allowed! In an attempt to add some lighter food to the season I like to experiment with healthier party dishes to counteract eating my weight in dips and desserts during all the festivities.

Potstickers are one of my favorite cocktail party treats, especially since I started serving them with a spicy and extremely easy soy sauce based dip. With my Aroma Rice Cooker on hand it made even more sense to rotate these tasty dumplings into my holiday menu again this season. The Sauté-Then-Simmer™ function is a perfect match for this recipe since I love to brown my potstickers before steaming them to add that authentic, slightly crunchy texture.

ASIAN STYLE POTSTICKERS WITH SHRIMP AND VEGETABLES
Makes 40 potstickers

For the potstickers:
40 wonton wrappers
1 bag of frozen Asian style vegetables, thawed and chopped
2 tbsp grated fresh ginger
2 garlic cloves chopped
1 green onion stalk, thinly sliced
1/4 cup teriyaki sauce
15 cooked shrimp, chopped

For the soy dipping sauce:
1/4 cup soy sauce
2 tbsp rice vinegar
2 tbsp red pepper flakes

sealing potstickersTo make the potstickers: Mix all potsticker ingredients, aside from wonton wrappers, together in the inner pot of your Aroma Rice Cooker. Set to Sauté-Then-Simmer™ and sauté the mixture for 5 minutes. Remove from rice cooker and rinse the inner pot for later.

Place 5 wonton wrappers on a clean work surface and spoon a teaspoon of filling into the middle of each wrapper. Brush the edges of the wonton wrappers with water to moisten. Pinch together opposite corners and seal the sides. Repeat with alternate corners. Place under a moist towel to keep from drying out.

brown potstickers in inner potSet your rice cooker to Sauté-Then-Simmer™ and add one teaspoon of vegetable oil . Working in batches, brown the bottom of your potstickers for 3-4 minutes. Add 1/4 cup water into the inner pot, close the lid and steam for 5 minutes. Repeat with remaining potstickers.

To make the soy dipping sauce: Mix together all ingredients, let sit for 5 minutes.

Serve potstickers with dipping sauce, enjoy!
