Cauliflower and White Bean Soup

Every January I’m more than ready to eat lighter after a month’s worth of holiday treats. A bit surprisingly, my family never complains about going along with my clean eating plan, perhaps they feel as indulged as I do. We do our best to cut out sugar, white flour and red meat. Don’t get me wrong, as I’m sure you’ve noticed in my other recipes, I have nothing against any of these ingredients, it’s just a simple and effective way to draw a line that gets us back on track to eating more whole, healthy foods.

These limitations make eating out a whole lot harder, but with the help of Aroma you won’t find me breaking the rules and swinging through the nearest drive-through, even in a pinch. Aroma has given fast food a whole new meaning in our house since a healthy, tasty meal is never more than 30 minutes away.

Ingredients
1 head of cauliflower, cut into small pieces
1 can of white beans, drained
6 garlic cloves, thinly sliced
2 tbsp olive oil
6 cups vegetable stock
salt and pepper to taste

Directions
Set your Aroma Rice Cooker to Sauté-Then-Simmer™ and heat 1 tablespoon of the olive oil. Add garlic and sauté until brown. Remove and set aside.

Add vegetable stock, cauliflower and a pinch of salt and close the lid. Set the rice cooker to Steam for 20 minutes.

When the cooking cycle has ended, add white beans and pureé until smooth. Add salt and pepper to taste.

Pour into bowls and serve with garlic slices and a drizzle of olive oil on top. Enjoy!

Tip: A simple soup like this is perfect for experimenting with different salt flavors, available in most supermarkets. This time around I used a garlic salt grinder, delicious!
