Toast 3 Ways

Sundays are a slow day for us. Instead of hurrying out the door after a bowl of cereal or eating a banana on the go, we take some extra time and enjoy breakfast as a family. The only problem being that nobody tends to prefer the same meal. My oldest and I prefer eggs and toast to start our day, while my middle son begs for chocolate pancakes and my husband and daughter ask for waffles topped with fruit. To please the entire bunch this past Sunday, I decided to become a short order cook, making a variety of breakfast items each of us would wholeheartedly enjoy. I simplified recipes for the varying palates utilizing one basic foundation, simple ingredients and just one cooking surface to turn out a simplified Super Pot Sunday breakfast spread pleasing to every whim and taste bud.

POACHED EGG TOAST WITH HAM OR TURKEY

1 slice bread of your choice
1 egg
1 slice deli ham or turkey, diced
butter
salt and pepper

With a glass or cup, cut a hole in the middle of the bread and lightly butter both sides.

Preheat your Super Pot to 300º F and place bread on the grill.

After a minute or so flip the bread, place meat in the opening and top with the egg.

Cover the pot. Toast is ready when egg looks milky but still has a soft yolk, about 2 minutes.

CHOCOLATE HAZELNUT TOAST

2 slices bread of your choice
2 tbsp chocolate hazelnut spread

Cover one slice of bread with the hazelnut spread. Top with the other slice.

Preheat your Super Pot to 300º F. With the lid on, grill toast on both sides for about 2 minutes, until golden.

TOAST WITH RICOTTA CHEESE, STRAWBERRIES AND HONEY

1 slice bread of your choice
1 strawberry, thinly sliced
2 tbsp ricotta cheese
1 tbsp honey
powdered sugar

Slice bread in half. Spread ricotta on one side of bread, top with strawberry slices and drizzle with half the honey.

Preheat your Super Pot to 300º F. With the lid on, grill toast on both sides for about 2 minutes, until golden.

Drizzle with remaining honey and sprinkle with powdered sugar.
