Farro Salad

Farro, Edamame and Goat Cheese Salad

Summer has definitely found its way to my neck of the woods which signals a shift to lighter dinner fare in my household. I love to create new salads balanced out with different types of grains easily cooked up in my rice cooker. By experimenting with different grains I find new and unique ways to get more healthy whole grains into my family’s diet and open up a whole new world of salad creations so we never get bored. This salad brings together a unique grain, yummy cheese, and flavorful add-ins for a complete meal in one bowl. Simply toss together and enjoy.

Ingredients

1 cup farro
3 cups water
salt to taste
1 cup edamame beans
1 cup radishes, sliced
2 cups lettuce of your choice
1/4 cup basil leaves, shredded
1/4 cup goat cheese

For the dressing:
2 tbsp honey
1/4 cup lime juice
1/4 cup walnut or other salad oil

Directions

Bring water to a boil in your rice cooker using the Steam function. Add salt and farro and let cook for 10 minutes. Drain and let cool.

While farro is cooking whisk together all dressing ingredients and set aside.

After the farro has cooled down, mix together with all other remaining salad ingredients. Toss with dressing and serve.
