As promised in my berry pizza post I’m excited to follow up with another recipe making use of the abundance of blackberries in my mom’s garden. I knew this jam would be good but I didn’t expect it to be such a tremendous hit among my family and friends. Now I’m begging the bushes to keep on growing so I can keep up with demand.
My friends have fallen for this sweet and tart topping, spreading it on not only their morning toast but also ice cream and grilled chicken… yes, grilled chicken. This almost too-easy-to-be-true jam gains its versatility from the interplay between the tart berries and sweet sugar. Although it sounds slightly crazy, I’m going to have to follow my friends lead and try it smothered on grilled chicken for a sort of summertime turkey-cranberry sauce flavor. Any crazy concoctions you’re going to pair this with?
Ingredients
2 cups fresh blackberries
2 cups sugar
Directions
Place ingredients in your rice cooker. Close the lid and set to Sauté-Then-Simmer. Cook until thickened, approximately 45-60 minutes, giving it a stir every 15 minutes or so.
