Slow Cooker Lemon Chicken
There’s just something about lemons that spell summer. They’re light and tart and add an undeniable layer of freshness to any dish. This chicken recipe was created to spice up my rotation of chicken dishes and is an example indicator of how un-boring chicken can be. It’s is extremely easy to put together and gives great variation to your plate. Serve hot stuffed inside pita bread or refrigerate for crisp salads throughout the week.

1 lb boneless, skinless chicken breasts
1/3 cup fresh lemon juice
4 cloves garlic, minced
1 medium onion, diced
2 tbsp red wine vinegar
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper

Whisk together all ingredients except chicken.

Place chicken in the inner pot of your rice cooker. Pour marinade over chicken and set to Slow Cook for 4 hours.

When your rice cooker beeps, shred chicken and serve.

Awesome recipe just reduce the cooking time, I used 2 lbs of Frozen boneless skinless chicken breasts, doubled the marinade and found the chicken fully cooked in 3 hours, shredded them, mixed back into juices and cooked for an additional 15 min. Juicy and flavourful tossed with greens, didn’t need any salad dressing, a great satisfying low cal meal, Thank-you for posting!
