I’ll let you in on a little secret… I use my rice cooker to slow cook a lot more than I use it to make rice. I tend to make rice in big batches and freeze it for later use so that when dinner time comes around my rice cooker also has my main dish covered. The Slow Cook function works as well, if not better, than the slow cooker I used to have and I don’t have to reserve extra counter space to have both. What can I say? I want it all and my rice cooker seems to give it to me! This sweet beef is the perfect break in my dominantly savory slow cooker rotation. It’s perfect over rice, inside tacos topped with a nice slaw or in between a sandwich bun. And make sure to serve it with all the pineapple chunks, they’re the best part!
2-3 lb beef roast
1 cup stir-fry or teriyaki sauce (the thicker the better)
1 (20 oz) can pineapple chunks with juice
1 medium onion, chopped
Add all ingredients to the inner pot of your rice cooker.
Set to Slow Cook for 4 hours. When the rice cooker beeps check for doneness, shred and eat!
