I first tried quinoa at a local restaurant here in San Diego and it was, for lack of a better saying, love at first bite. Basically, quinoa tastes like brown rice and couscous had a delicious grain baby and I can’t get enough. It’s a trendy buzz ingredient on the internet right now because of its health benefits but I’m telling you that this stuff is simply delicious, health benefits or not. Like rice and other grains, quinoa can be flavored any way your heart desires. I’ve seen tons of sweet oatmeal-esque recipes, chilled lunch-worthy salads, and savory dinner time bowls but if you haven’t had quinoa before this is the perfect recipe because obviously EVERYTHING tastes good with bacon and cheese.
2 cups quinoa, rinsed
4 cups water
4 slices bacon, diced
1 cup cheddar cheese, grated
1 cup sour cream
1/2 cup green onions
Optional: extra cheese and sour cream for serving
Preheat your rice cooker on Sauté-Then-Simmer. Add bacon and sauté until crispy.
Stir in quinoa until each grain is coated with the bacon grease. Add water and shut the lid.
When your rice cooker beeps, stir in the cheese and sour cream. Serve with green onion and extra cheese and sour cream, if desired.
