Pumpkin Spice Swirl Oatmeal

It is back to school season and most of us have settled into a familiar routine of early mornings and last minute homework. After the long, easy and leisurely pace of summer it is always hard to rekindle a timely breakfast routine that satisfies everybody’s  wishes without transforming my kitchen into a diner and me into a short order cook.

Thanks to my rice cooker‘s preset Oatmeal function I can crank out tasty variations of an all-time favorite that should satisfy even the pickiest palates. With the first day of fall just behind us and Halloween just around the corner, pumpkin spice is making its yearly rounds as the perfect add on my whole family loves. If you haven’t stocked up on pumpkin spice just yet, cinnamon, nutmeg or any warm spice makes a great substitute.

3/4 cup oatmeal
1 1/4 cup water
2 tbsp almond butter, or nut butter of your choice
4 tbsp honey
2 tsp pumpkin spice

Place the oatmeal and water in your inner pot. Put the almond butter, honey and pumpkin spice in a zip-lock bag and place in the steam tray. Set to Oatmeal.

When your rice cooker beeps, carefully remove the Steam Tray and zip-lock bag. Spoon oatmeal into bowls, cut a corner off the plastic bag and decorate each portion of oatmeal with a swirl.

    1. I would not recommend preparing at night and waiting for the morning because it would likely be pretty mushy, as you had suggested.
