Fall has finally arrived and with it, comes the rain and the cold. This is the perfect lunch or dinner to make for anyone on the go. You just place all your ingredients into your Rice Cooker and set the timer to 4 hours and you’ll be good. The best part is that the Aroma Rice Cooker’s Slow Cook function automatically goes to Keep Warm after it’s done cooking so you don’t need to worry about your food being cold when you get home. This medley of sweet potatoes, chicken and apples is smooth on the tongue and evokes the sensation of fall.
1 large sweet potato, peeled and cut into 1-inch chunks
2 large chicken breasts cut into 1-inch cubes
sea salt and black pepper
2 cloves garlic, finely minced
1/2 chopped onion
1 cup sweetened applesauce
2 tsp apple cider vinegar
1 tsp curry paste (you can also use curry powder or cumin if you don’t have curry paste)
Place the sweet potato chunks and chicken breasts in the bottom of an Aroma Professional Rice Cooker with slow cooker function.
Season with salt and pepper.
In a small bowl, add the garlic, onion, applesauce, cider vinegar, curry paste and then stir.
Pour the mixture over the chicken and sweet potato chunks.
Cover and select ‘slow cook’ function for 4 hours or until the chicken and sweet potatoes are tender (may be as little as 3 hours).
Serve either alone or over rice. You can also eat it with a warm baguette.
