With oranges in season, this is the perfect citrus-y breakfast to start your day off right!  Simply wake up, whip together the batter, and place it into your rice cooker to cook while you get ready for your day!  It’s a quick, easy and absolutely delicious recipe!  The best part is that this recipe makes at least two full pancakes!  A meal for two in less than 20 minutes!

About 10 min prep time, about 15 min cook time.

Ingredients
1 cup of pancake batter
zest from 1 orange and 1 lemon
1 tbsp fresh whole-milk ricotta cheese
coconut oil to coat the bottom of the rice cooker pot
butter as a topping
powdered sugar as a topping
maple syrup and whipped cream as a topping
assorted fruits can also be added as an added topping

Directions
Follow your pancake batter instructions and make your pancake batter.
Fold in 1/2 cup of ricotta cheese, the lemon zest and orange zest.
Pour half of your combined pancake batter mix into your mi AROMA mini rice cooker and press the white rice function.
Cook until the timer beeps (approximately 20 minutes).
Serve warm with butter, maple syrup and dusted powdered sugar. As an added bonus, you can also add whipped cream and berries of your choice for added flavor.
