Have your own island getaway with this fresh and easy recipe for couscous! The tropical and Hawaiian accents of this dish will transport you right to the shores of Hawaii.
1/2 cup couscous
1/2 cup + 3 tbsp chicken stock
1/2 tbsp olive oil
1/2 Papaya, diced
juice from 1/4 orange
1/8 cup honey
1 tbsp apple cider vinegar
1 tsp cinnamon
1 tsp cayenne pepper
a pinch of salt
1/4 cup chopped macadamia nuts, toasted
small handful of rosemary, fresh mint or basil
**If you like your couscous a little bit more al dente, you may subtract the broth amount until your desired texture is achieved
In your rice cooker pot, add chicken stock, rosemary, and salt.
Let couscous soak for approximately 5 minutes.
Add olive oil. The fat from the oil will help improve the texture of the couscous and help prevent the grains from sticking together.
Press the White Rice function on your Aroma Mi mini rice cooker.
While couscous is cooking, dice the papaya and toss with orange juice.
For the dressing, whisk together honey, apple cider vinegar, cinnamon, and salt.
Once the timer has gone off on the Aroma Mi, transfer your couscous into a small bowl and let it cool for at least 10 minutes.
Toss with the macadamia nuts, papaya, and dressing. Sprinkle with a handful of fresh mint or basil and enjoy!
