Za’atar Crusted Tofu (Gluten Free & Vegan)

This colorful presentation of tofu is packed with lots of flavor. Marinated tofu is rolled in Za’atar, a traditional Mediterranean spice mixture of sesame seeds, sumac, and oregano. This intensely aromatic and ancient spice blend then takes a quick turn in the Aroma Wok AEW-305 and plated on a bed of flavorful rice studded with olives, bell peppers and mint.

1 lb extra firm tofu
¼ cup gluten free soy sauce
2 tbsp organic brown sugar
2 tbsp white balsamic vinegar
1 tbsp garam masala
4 tbsp za’atar spice mix *
4 tbsp peanut or vegetable oil

* Be sure your za’atar is gluten free as some store brands contain roasted wheat. Or make your own mixture:
Za’atar Seasoning Mix
4 tsp dried thyme
2 tsp powdered sumac
¼ tsp sea salt
3 tsp toasted sesame seeds

Slice the tofu into ½ inch thick slices. Place on a flat surface covered with layers of paper towels to drain and remove excess moisture.
Spread the za’atar onto a plate. Combine the soy sauce, brown sugar, vinegar and garam masala in a bowl and stir well.
Carefully brush the mixture onto all sides of the tofu and then gently roll in the za’atar. Set aside until all tofu pieces are coated.
Heat the oil in the Aroma Wok to 350 degrees. Working in batches, carefully add tofu slices and cook until lightly crispy.
Drain on paper towels and serve over cooked rice.
Garnish with olives, diced red bell pepper, green onions and fresh mint.
Grind together the thyme, sumac and salt until it becomes a powder. Stir in sesame seeds.
Adjust the seasonings according to your taste. Keep in an airtight container in the refrigerator or freezer.
