Here is another recipe for your crunch time schedule: Curry in a Hurry, a real treat when you are on the go. While it is a breeze to fix, you need not eat fast unless you need this curry in a hurry!
1 tsp diced onion
1 tsp red curry paste
1 tbsp brown sugar
6 oz chicken broth
6 oz coconut milk
1/2 tsp fish sauce
6-8 asparagus, tips only
1/4 red bell pepper, cut into strips
Garnish with lime zest and cilantro
Combine all ingredients except the shrimp and pour into the pot of the mi Aroma mini rice cooker. Lock the lid and press switch to cook. When it flips to warm, add the shrimp and press to cook for an additional 5 minutes or until shrimp is cooked, depending on the size of the shrimp.
If desired, garnish with a bit of lime zest and a few sprigs of cilantro.
