The word Shakshuka is synonymous with breakfast in many parts of North Africa and the Middle East. Worldwide there are recipes for eggs that are nestled in a tomato sauce. This take on Shakshuka is prepared in your Mi Aroma mini rice cooker so it couldn’t be easier or quicker. But don’t limit yourself to breakfast as it makes a great lunch or light dinner.
3 tbsp diced onion
½ clove garlic, diced
¼ tsp cayenne pepper
1 ½ cup marinara or chunky tomato sauce
1 green onion or fresh basil leaves for garnish
Place all ingredients except the egg in the Mi Aroma. Stir to combine and press cook. When heated through, make an indentation in the sauce with the back of a spoon or ladle and carefully add the egg. Close lid and cook for about four minutes or until desired doneness. Season to taste with salt. Sprinkle with chopped fresh basil leaves or green onion.
