Here is a nice twist, or should I say kick, to dessert. These rich, dense brownies have a touch of heat with the addition of cayenne pepper. Made in the Mi Aroma mini rice cooker, Hot Mama Brownies are perfect for that small gathering. Or consider wrapping a few and freezing for yourself later on, if there are any left!
2 tbsp butter
2 tbsp vegetable oil
½ cup sugar
½ cup unsweetened cocoa powder
1 tsp vanilla extract
1 egg, beaten
6 tbsp flour
¼ tsp cayenne pepper, or more as desired
Pinch of salt
In the microwave or on the stove top, melt butter with oil. Add the sugar and cocoa powder and stir until smooth and sugar has dissolved. Remove from heat, add remaining ingredients and mix just until combined.
Lightly spray the inner pot of your Mi Aroma with cooking spray and add batter. Close lid and press cook. When it switches to warm setting, wait a few minutes and then press the cook button again. The brownies will need 3-4 additional cooking cycles. Allow the brownies to cool in the inner pot for at least 15 minutes before removing. They will continue to set as they cool down as well as develop a deeper flavor.
