Veggie Loaded Greek Strata

This Greek Strata is easy to make with a great balance of flavors. It can be prepared the night before and refrigerated. It’s perfect for breakfast or serve it with a salad for a fantastic lunch. Pare it with a small salad and some crusty bread and you have a meal for yourself or perhaps a friend or two!

2 eggs
¾ cup milk or half and half, for a richer flavor
1 ½ cup fresh bread, torn into bite sized pieces
1 cup assorted diced vegetables, such as bell peppers, asparagus tips, mushrooms, zucchini, olives, onion
1/8 tsp Greek seasoning
Salt and pepper to taste
¼ cup mozzarella cheese, shredded
¼ cup feta cheese

In a bowl, beat together the eggs and milk. Add the bread, making sure each piece is submerged. Set aside while cutting up the vegetables.
Combine the vegetables, seasonings and mozzarella cheese with the egg mixture. Lightly spray the inner pot of your Mi Aroma with cooking spray and add the strata mixture. Lock the lid and press Cook button until eggs have set. Allow to cool for 5 minutes before removing from inner pot.
Garnish with feta cheese. May be served hot or at room temperature.
