Asian BBQ Chicken Salad


Can you have succulent chicken in an Asian flavored BBQ sauce served on a bed of Romaine and fresh vegetables in just minutes? Yes! With the Mi Aroma mini rice cooker, it’s more than doable. If time allows, marinate the chicken for an hour before cooking. Either way, the chicken cooks while you chop your favorite salad ingredients. This hot and savory, cool and crisp salad really fits the bill!

8-10 oz. boneless chicken, cut into bite sized pieces
1/3 cup BBQ sauce
1 tbsp hoisin sauce
1 tsp soy sauce
1/8 tsp powdered ginger
squeeze of lime juice
miAroma mini rice cooker MRC-903

Mix all ingredients together in the inner pot of the Mi Aroma. Lock the lid and press the cook button. When it switches to warm, check for doneness and if needed, cook for another cycle. Plate on top of fresh greens, cucumber slices, tomatoes, mandarin oranges and strips of bell pepper. Toss fried ramen noodles over all. For a light and simple salad dressing, sprinkle with a mixture of rice wine vinegar, olive oil and sesame oil
