Want to make tender, juicy and delicious chicken breasts? Just remember five letters: S O S R R, which stand for Soak, Oil, Sprinkle, Roast, and Rest. And follow this recipe!
3-4 boneless, skinless chicken breasts (about 2 to 2½ lb total weight, NOT pre-brined)
4 cups water
¼ cup Kosher salt (or 1/8 cup regular salt)
1/8 cup sugar
2 tbsp melted butter (or olive oil)
Salt for seasoning
Fresh ground pepper
Ground Paprika (preferably smoked)
Optional: onion powder and garlic powder

The brine solution: heat one cup of water to near boiling (microwaving is fine). Add salt and sugar to the heated water. Stir until nearly dissolved; add three cups of room temperature water.
Transfer to a large bowl and add chicken breasts to it. The warm solution will speed up brining while warming up the chicken to speed up cooking.
SOAK for a minimum of 15 minutes (and a maximum of 60 minutes at room temperature). While waiting, preheat oven to 450° F
Drain the brine solution and quickly rinse the breasts with water. Pat each chicken breast dry (important) with paper towels and place in Aroma Doveware Casserole.
Brush all sides of each breast with butter or OIL and then SPRINKLE salt, pepper, paprika, and any optional seasonings you desire on each side.
Place uncovered casserole in preheated oven and ROAST for 15-20 minutes. Use a thermometer (instant read) to check chicken until it is 165° F in the thickest portion of the thickest breast.
Remove from oven, loosely tent with aluminum foil, and REST for 5-10 minutes before serving.
