Dahl Rainbow Salad (Gluten Free & Vegan)


The small but nutritionally power packed lentil (Dahl) makes a great paring in this healthy and colorful salad. Lentils not only help lower cholesterol, but with only 230 calories for a whole cup of cooked lentils this tiny nutritional gem fills you up—not out. They are always on my pantry shelf as I use them year round in soups, stews, chilis and salads. And with the Aroma Turbo Rice Pressure Cooker, your lentils are cooked in less time than it takes to chop the vegetables of your choice and choose your favorite dressing!

1 cup lentils, rinsed
3 cups vegetable broth
1 whole bay leaf
¼ tsp salt
¼ tsp dried thyme

Aroma Turbo Rice pressure Cooker, APC-804SB

Combine all ingredients in the inner pot of the Aroma Turbo Rice Pressure Cooker. Close the lid securely and set the steam vent to “Airtight”. Set to High pressure (3P) and cook for 10 minutes. When completed, carefully release the steam vent to the open position and remove the lid. Drain the lentils and allow to cool. Serve warm or cold and top with your favorite salad dressing. Here is one of my favorite vinaigrette:

1 lemon
½ tsp salt
½ cup olive oil
½ clove minced garlic
1 tsp ground cumin
½ tsp ground coriander
½ tsp turmeric
¼ tsp red pepper flakes

With a vegetable peeler, remove a thin strip of the lemon peel and dice into small pieces. Place in a small bowl along with 4 tbsp fresh lemon juice. Whisk in the remaining ingredients. Taste for seasonings and adjust according to your preference.
