Grilled Smoky Pork Steaks with Chimichurri Sauce


Here is an easy way to get that nice smoky flavor without cooking over a wood fire. Smoked paprika is a very popular Spanish spice that is widely available and easy to find. This is one of my favorite spices as it can add depth and also a bit of sweetness to chicken, beef, soups and stews.

4 pork steaks
2 tsp cumin
4 tsp brown sugar
3 tsp smoky paprika
¼ tsp salt
¼ tsp black pepper
1 tbsp olive oil

Chimichurri sauce
1 cup fresh parsley
3 cloves garlic
2 tbsp fresh oregano
¼ cup red wine vinegar
1 tsp red pepper flakes
½ tsp each salt and pepper
1 cup olive oil

Aroma 3-in-1 Grillet

Mix together all of the spices and brown sugar and rub on both sides of the steaks. Let sit for 20 to 30 minutes. Place 1 tbsp olive oil in the Grillet and heat to 350° F. Cook steaks for about 5 minutes on each side or until browned and meat thermometer reaches 145-160 degrees. Remove and place onto a serving plate.

Place all but the olive oil in a food processor or blender and finely chop together. With the motor running, slowly add the olive oil. Taste and adjust seasonings as needed. Top each steak with some Chimichurri sauce.
