Eggs, Bacon & Chips


For those times you’d like some hash browns to go with your eggs, but have neither the time nor a potato, here is a quick and easy way by adding crushed potato chips to your egg mixture. Try experimenting with various chips and flavors. Perhaps you feel like going bold by adding chipotle chips, or jalapeño chips. Or try it with the perfect egg pairing -sour cream and onion chips. The choices are endless, so make it yours!
(If you prefer a softer texture, soak the chips in the milk mixture for a few minutes before cooking.)

3 eggs, beaten
1/3 cup milk, cream or ½ & ½
2/3 cup potato chips, crushed into small bits
1 tbsp diced onions
3 tbsp diced cooked bacon or bacon bits

Mi Aroma mini rice cooker

Combine all ingredients, mix well and pour into the Mi Aroma inner pot. Lock the lid and press the switch to cook. After six minutes open, stir, then continue cooking for another four minutes or until eggs are cooked to your liking. Garnish with additional bacon, cilantro, parsley or shredded cheese.
