Here’s one for that special lunch or dinner. Chicken simmers in a green Thai sauce while you mold your prepared pasta noodles in oiled ramekins. When chicken is done and you are ready to serve, gently place chicken pieces in the center of your nests and spoon over the sauce. Garnish and serve.
6-8 oz chicken, cut into bite sized pieces
1 cup prepared Asian simmer sauce*
1/3 cup peas, fresh or frozen
1 tbsp cream cheese (optional)
Place the chicken, simmer sauce and peas in the Mi Aroma mini rice cooker, mixing well. Lock the lid and press the cook button. When the cooker switches to warm, check to see if chicken has thoroughly cooked; continue to cook for an additional ten minutes if needed or until chicken is done. Stir in the optional cream cheese for a silkier richer version or if your simmer sauce is too spicy. Serve over noodles or rice. Garnish with shredded basil, if desired.
*I used Trader Joe’s Thai Green Curry simmer sauce. Many larger grocery stores also carry different varieties of simmer sauces.
