This vegetarian egg and cactus (nopalitos) dish is great for any meal of the day. Steaming the eggs in the Aroma Turbo Rice Pressure Cooker not only frees you from standing and stirring at the stove, but your eggs will be perfectly cooked, resulting in a soft creamy texture.
Prepared nopalitos can be bought at most grocery stores; just drain, rinse and add to the cooked eggs.
2 tsp cream, ½ and ½ or water
1 tsp diced shallot
1/3 c nopalitos, rinsed and drained
1/3 c queso fresco or any cheese you prefer
Salt and pepper
2-4 warmed tortillas
2-3 tblsp chopped cilantro
1 small diced tomato
Place the steam rack into the center of the inner cooking pot of the Turbo Rice Pressure Cooker and fill with one cup of water.
With a whisk, mix the eggs, milk and shallots together in a bowl until thoroughly combined. Lightly spray a heat safe bowl with cooking spray and fill with the egg mixture. Cover tightly with foil and place on top of the steam rack. Turn the steam vent to the “exhaust” position and steam for 6-8 minutes. The time will vary depending on the size of the eggs and the shape of the container.
When eggs are ready, stir in the nopalitos and season with salt and pepper. Fill the warmed tortillas with the egg mixture then garnish with cheese, fresh tomatoes, cilantro and hot sauce if desired.
