Crunchy Broccoli (Vegetarian)


For a ‘superfood’ snack during the Superbowl or anytime, broccoli can be it!  A yummy way to get all the vitamins and nutrients in crunchy bites with friends, and kind of like tempura vegetables without deep frying!  This easy and versatile recipe can be used even as finger food at a party with friends or a special side dish.

2 broccoli crowns
½ cup alfredo sauce (make your own or use your favorite brand)
1 cup panko bread crumbs
¼ cup shredded cheddar cheese
¼ cup barbecue sauce OR ‘Buffalo wing sauce’ (make your own or use your favorite brand)
Optional Sriracha sauce

15 min prep time, 20 min oven time

Rinse broccoli and shake off excess water. Cut broccoli into medium to large sized spears.  Place Alfredo sauce in one bowl and panko in a second bowl.  (Optionally add some barbecue sauce, wing sauce, or Sriracha to the Alfredo sauce to flavor it as desired.)

Preheat oven to 400° F (Optionally lightly grease the Casserole bottom, although the non-stick feature makes this truly optional.)  Dip each spear into sauce bowl to coat, shake off excess, dip into panko to coat, and shake off excess.  Place coated spears in Casserole as a single layer.  If preferred, use tongs or chopsticks to handle spears or hold them by the stem to dip the floret portion.  It is ok if the pieces touch each other in the Casserole.

Transfer uncovered Casserole to oven for 20-25 minutes (the panko will start to turn lightly golden brown). Remove from oven, add cheese on top of half (or more) of the pieces and return to oven for 1 minute to melt cheese.  Remove from oven and drizzle barbecue sauce, wing sauce, or Sriracha on pieces as desired and serve within minutes (the pieces cool very quickly).
