This lentil dish is high in nutrients, high in protein and high in flavor! It’s great reheated as the spices become more developed, adding a new dimension to their distinctive flavors. This dish is perfect for a nourishing lunch or as a side with dinner.
4 tbsp olive oil
1 cup sweet onion, small dice
2 tsp cumin seed
1 tsp coriander seeds
4 cloves garlic, finely diced
14 oz tomatoes, diced and drained
2 tsp garam masala
2 tsp turmeric
1 ½ cups red lentils – rinsed well
3 cups water
1 cup kale, finely chopped
In the Aroma Stew Pot sauté the onions in the olive oil on medium heat until translucent. Add the cumin and coriander seeds and continue to cook for 2-3 minutes while stirring. Add garlic and cook just until fragrant. Stir in the tomatoes, garam masala, turmeric and lentils and cook for another five minutes. Add the water and any tomato juices and bring to a boil. Reduce heat and stir in the kale. Cover with lid. Simmer on low for 30 minutes or until thick and tender.
