Have your 3-in-1 Grillet handy for this great side dish. You will find that may blends of Za’atar seasoning will have Sumac included but the extra dash added here give these vegetables just a bit more fruity sourness that adds to the flavor. Carrots and parsnips are at their best when grilled as it brings out their natural sweetness. Basting them with this mixture of Za’atar and Sumac will add an additional depth of flavor. Enjoy this delicious dish that is bold with colors and flavors.
1 lb each carrots and parsnips, cleaned and trimmed
¼ cup olive oil
2 tbsp za’atar
½ tbsp sumac
In a small bowl, mix together the olive oil, za’atar and sumac.
Cut the carrots and parsnips crosswise into pieces about two inches long. Cut any thick ends in half lengthwise to allow for even cooking.
Heat the Aroma Super Pot Grill to medium heat. In stages, place the vegetables on the grill leaving room on all sides so they can be cooked evenly. Baste liberally with the Za’atar mixture. Cover with lid and grill for about 3 minutes or until they develop grill marks. Gently turn the vegetables over and repeat until all sides are nicely grilled and fork tender.
Place on serving platter and garnish with fresh mint if desired. Serve warm or at room temperature.
