Who doesn’t like chocolate cake? This recipe here is for an extra healthy chocolate cake which will tickle your taste buds without tacking on unwanted pounds! With summer right around the corner, everyone wants to look their best but admit it, we all have our cravings! This recipe incorporates one of my favorite ‘superfood’ beets! Think of it as adding carrots to a cake, except that while the beets help to moisten the cake, you wont taste them at all! This cake recipe is also a perfect surface for decorating with spring or Easter themes!
2 cups multipurpose flour
¾ cup unsweetened cocoa powder
2 tsp baking powder
1½ tsp baking soda
¾ tsp salt
4 eggs, beaten
1 cup sugar
¾ cup maple syrup
½ cup melted coconut oil
3 cups peeled and shredded beets
1½ tsp vanilla extract
Marshmallows, pretzels, jelly beans, and green sugar sprinkles (or your choices) for decorating
Aroma Doveware Casserole
12 – 16 servings
(Or use half the ingredients with an Aroma 4 qt Doveware Dutch Oven for 6-8 servings with reduced oven time)
25 min prep, about 40-50 min baking time
Sift or mix flour, cocoa powder, baking powder, baking soda, and salt in bowl; set aside as dry ingredients.
Using a hand or stand mixer, beat eggs, sugar, syrup and oil until fluffy. Then beat in dry ingredients. Add beets and vanilla and beat until combined (about 1 min or less). Pour into greased inside of Aroma Doveware Casserole.
Place UNCOVERED Casserole in oven pre-heated to 350° F for about 40-50 min (test for doneness in center with a toothpick until it comes out clean).
Remove from oven and allow to cool slightly. Serve warm.
