Fast & Easy Chicken with Almond Crust

Is necessity the mother of invention?  Everyone NEEDS a ready in minutes, no marinating, chicken recipe with easy clean up.  With a yummy ‘superfood’ almond crust on top, who can say no?

Ingredients
4-6 boneless, skinless chicken thighs (boneless reduces cooking time)
Dijon mustard (use your favorite)
Teriyaki sauce (use your favorite)
Shredded Parmesan cheese (or Mozzarella as substitute)
Crushed or sliced roasted almonds

Aroma Doveware Casserole
Servings 3 – 6

Directions
Pre-heat oven to 325° F.  Pat dry chicken thighs with paper towels and place, smooth side down, in Aroma Doveware Casserole.  Using a tablespoon, smear about ½ to 1 tbsp of Dijon mustard on each thigh.  Then smear about ½ to 1 tbsp of teriyaki sauce on top of the mustard.  Flip each thigh and repeat smearing of mustard and teriyaki sauce.

Generously sprinkle cheese on each thigh and then place uncovered casserole in oven for 15 minutes.  Then remove from oven, sprinkle almonds as desired on the thighs and return to oven to complete cooking.  Use a thermometer (instant read) to check chicken until it is at least 175° F in the thickest portion of the thickest thigh (about 10-15 minutes).

Make a 50/50 mixture of the mustard and teriyaki sauce to use as an optional dipping sauce.

Remove from oven, and allow chicken to rest (if you can!) for 3-5 minutes before serving (to let juices settle).
