Sweet Cinnamon Risotto

Risotto is a traditional Italian dish usually made with savory flavors such as chicken stock and butter. For this reason, it is usually paired with a hearty entrée to make a delectable dinner. Since the summer is approaching, the days of warm and hearty foods are falling behind me. I find myself navigating toward sweet foods that I cannot eat all day like ice cream. For this reason, I have combined the robust texture of risotto and the sweetness of cinnamon to be consumed for any meal of the day!

2 cups risotto rice
1 cup sweeten condensed milk
1 tbsp coconut milk
½ tsp cinnamon
½ tsp vanilla extract
½ tsp lemon juice
2 tbsp butter

For sweet and salty twist, add a pinch of salt!

AROMA Professional 12-cup Digital Rice Cooker, MultiCooker

Add risotto rice and water to the inner pot according to the rice cooker instructions using Aroma Professional Rice Cooker/Multicooker.  Select white rice function to cook.
When rice is done stir in sweetened condensed milk, cinnamon, vanilla, lemon juice, and butter.

  1. I have been making sweet rice, aka rice pudding for years using minute rice, vanilla ice cream, and cinnamon… I cannot wait to try this recipe! It sounds delicious, and just as easy!
