Thai Salmon Cakes

Eating healthy fish like salmon with unique spicy and aromatic Thai flavors is one of my favorite foods.  And the tasty combination of salmon with those flavors includes some kale for an extra health and energy boost!

1 lb boneless, skinless salmon fillet, or four 4 oz salmon patties
1 egg, beaten
1 tbsp fish sauce
1 tbsp Thai red curry paste
1 garlic clove, finely minced
½ tbsp grated ginger
½ tsp chili pepper flakes (use more if preferred)
1/3 cup kale leaves, roughly chopped
1/3 cup red bell pepper, finely chopped
1/3 cup loosely packed cilantro, finely chopped
1 green onion, finely chopped
Zest of one small lime with juice from half the lime
Panko type breadcrumbs
2 tbsp cooking oil
Thai sweet chili dipping sauce

Makes about 6-8 patties
About 20-25 min prep time and about 5 min cooking time

Thaw salmon to near room temperature.  Roughly chop salmon fillets or mash salmon patties with strong fork.  Transfer to mixing bowl and add egg, fish sauce, curry paste, garlic, ginger and pepper flakes; mix ingredients together.

Add kale, red bell pepper, cilantro, green onion, and lime zest and juice before stirring thoroughly.  Drain any excess liquid and add about 2/3 cup panko (or more if needed) to increase mixture stickiness to form into patties.

Add oil to Grillet and set to 275° F.  Grill patties about 2-3 minutes per side.  Garnish and enjoy!
