Having meatloaf for dinner tonight? How about a meatloaf sandwich for lunch tomorrow? The MiAroma Mini Rice Cooker cooks just the right amount for two servings. This recipe is easy to prepare, and cleanup is a snap. All you need to do is relax and enjoy.
½ lb ground beef, turkey or chicken
1/3 cup gluten free bread or cracker crumbs
1 tsp gluten free Worcestershire sauce or fish sauce
¼ tsp each granulated garlic and onion
2 tbsp minced parsley
2 tbsp ketchup or BBQ sauce
2 tbsp milk
1 hard-boiled egg
Additional ketchup or BBQ sauce
In a medium bowl, combine the bread or cracker crumbs, Worcestershire sauce, seasonings, parsley, ketchup and milk. Add the ground meat and mix with a fork until evenly blended. With wet hands, shape the meat around the hard-boiled egg, keeping the egg centered.
Place the meat into the cooking pot that has been lightly sprayed with cooking spray or oil. Lock the lid and press the button to cook. When the button switches to warm, open lid and pour 2-3 tbsp of ketchup over the top of the meat loaf. Lock the lid and continue to cook for another cycle or until meat has cooked or registers 160 degrees. Allow the meatloaf to cool for a few minutes before slicing. Serve with extra sauce if desired.
