Vegan Crumble Anytime (Gluten Free)

Tasty, easy and no oven needed.  Multiple ‘superfoods’ combine in this recipe, which is sweet and slightly crunchy while making fresh fruit more filling.  Or try adding it to plain yogurt.  Make it in advance and it can be enough for multiple breakfasts, brunches and desserts in a week!

1 cup uncooked quinoa/amaranth/millet blend (organic ‘ancient blend’ is perfect)
2 cups water
½ cup peeled and shredded fresh beet (this is about one small beet); use more if the beet seems dry
½ tsp allspice
½ tsp ground cinnamon
½ tsp nutmeg
½ cup brown sugar (use more or less according to your taste)
2 cups roughly chopped or thickly sliced fresh fruit (examples:  apples, strawberries, pineapple, pear, cantaloupe, and honeydew melon)
Sliced or chopped nuts as optional topping (almonds, walnuts, or your favorite)

Aroma Professional Rice Cooker (serves 4-6)
About 35 min total time

Add blend and water to inner pot of Aroma Rice Cooker; cover and select “white rice” setting.  Wait 20 min (set a timer).  While waiting, peel and shred beets; place in bowl with allspice, cinnamon, and nutmeg.
When display indicates 12 min remaining, open cover and quickly fluff blend.  Add beets and spices and stir briefly to combine.  Cover again and let cycle complete, then stir in brown sugar.  Leave lid open for 1-2 min before serving warm with fresh fruit and topping(s).
