Caramel Cracker Ice Cream

This ice cream is perfect for satisfying a sweet and salty craving–creamy vanilla stirred with crackers covered in caramel and melted chocolate. And creating this dessert is simple and fun with the Aroma Ice Cream Maker!

45 Ritz crackers
1 cup butter
1 cup brown sugar
2/3 cup corn syrup
1 tsp baking soda
1 and 1/4 cup semi-sweet chocolate chips
3 cups whole milk
2 and 1/2 cups cups sugar
6 cups half-and-half cream
4 tbsp pure vanilla extract

Line a sheet pan with parchment paper and preheat oven to 350 degrees. Spread crackers in a single layer on the pan.

In a pot melt butter, then add sugar and corn syrup. Bring to a boil, stirring constantly. Maintain a boil for two minutes and then remove from heat. Add baking soda and stir until combined. Pour the caramel mixture over the crackers and bake at 350 degrees for 10 minutes. When done, quickly transfer crackers to wax or parchment paper and allow to cool. Melt chocolate and spread over crackers. Allow crackers to cool until hardened.

In a large bowl whisk together milk, cream, sugar and vanilla until sugar is dissolved. Pour into the freezer bowl of your Aroma Ice Cream Maker and surround with ice and rock salt. Turn on machine and mix for about 25 minutes. Break up crackers and stir into ice cream. Serve as is or put into the freezer until firm (about 2 hours).
