Buffalo Chicken Cheese Tortellini

Making a substantial dinner for your family after having a full and busy work day can prove to be a tough task. That’s where super easy and accessible “one pot meals” come into play! This one pot meal combines two family classics, buffalo chicken and cheesy tortellini, to make a dish that is prone to even the pickiest of eaters. Our buffalo chicken tortellini can be whipped up in no more than 30 minutes leaving plenty of time for you to sit back, relax, and enjoy your weekday nights!

2 tbsp butter
1 tsp minced garlic
3 tbsp flour
3 cups chicken broth
2 cups shredded chicken (We used rotisserie chicken and shredded it ourselves with a fork!)
1 (20 oz) package cheese tortellini
2/3 cup buffalo hot sauce
2/3 cup ranch
2 cups mozzarella cheese, shredded

6-Quart Pasta Cooker
8-10 servings
Prep Time: 20 minutes
Cook Time: 15 minutes

Melt the butter in your Aroma pasta cooker using the “Sauté” function. Add 1 teaspoon of minced garlic to the pot, stirring for about a minute. Whisk in the flour for about 3 minutes or until the mixture is smooth.
Gradually pour the chicken broth into the pot while whisking constantly. Allow the broth to thicken slightly.
Add the tortellini to your pasta cooker and bring to a boil by putting your pasta cooker into “Boil” mode. Cook tortellini for about 8 minutes.
Add chicken, buffalo sauce, ranch dressing, and cheese to the pot and stir well. Place lid on top of your pasta cooker and let it cook for about 5 minutes or until cheese is melted.

  1. Not sure if this can be done with raw chicken or cooked. It suggested rotissatie but will it work with raw chicken also?

    1. We did not test with raw chicken, but you can try the recipe with small 1 inch cube sized pieces and adding in at the same time with the broth. Of course, be sure that the raw chicken is cooked adequately with no pink inside.
