Summer Berry Cake

This cake is perfect for a summer picnic–light, sweet, and fresh. Simply mix and pour into your Aroma Rice Cooker and you will have a fluffy cake to top with berries and cream. This pretty dessert will be a hit at all your summer events!

Cake Ingredients
3/4 stick (6 tbsp) butter
1 cup sugar
2 eggs
1/3 cup sour cream
1/2 tsp orange zest
1/2 tsp vanilla extract
1 cup flour
1/8 cup cornstarch
1/4 tsp salt
1/2 tsp baking soda

Filling Ingredients
1 and 1/2 cups heavy cream
4 and 1/2 tbsp sugar
1 tsp vanilla extract
1 pint mixed berries (strawberries, blueberries, blackberries, etc.)

Servings: 8-10
Cooking time: 50 minutes

Cream butter and sugar on high speed with electric mixer until light and fluffy. Then on medium speed, add eggs (1 at a time), sour cream, orange zest, and vanilla. In a separate bowl, sift together flour, cornstarch, salt, and baking soda. On low speed, slowly add dry ingredients to butter mixture and combine until smooth. Pour batter into the inner pot of your Aroma Rice Cooker and press cake button.

To make the filling, whip cream, sugar, and vanilla on high speed until firm. Once cake is finished cooking, remove and allow to cool on wire rack. Then cut cake in half and spread with filling and mixed berries. Cover with top slice of cake and spread remaining cream and berries.
