Spinach and Turkey Meatballs with Asparagus

This dinner for two can be made in your rice cooker all at once! Incorporating your greens, the meatballs and asparagus are delicious and savory. All you have to do is prepare the food and leave your rice cooker to steam while you sit back and relax.

20 oz ground turkey
2 cups spinach
8 oz asparagus
1/2 cup milk
2 slices bread
1 cup parmesan cheese, grated or shredded
2 cloves garlic, minced
1 tbsp extra virgin olive oil
2 tbsp meatloaf spice blend
salt and pepper

Servings: 2
Cooking time: 35 minutes

Engage Sauté-Then-Simmer function of your Aroma Rice Cooker. Once heated, cook extra virgin olive oil, garlic, and spinach for 3 to 4 minutes (until spinach is wilted). Then pour into a large bowl and turn off Saute-Then-Simmer function. Add turkey, milk, bread, cheese, and spice blend to the bowl and combine with hands until well mixed. Shape into 4 to 5 meatballs and place in the inner pot. Place asparagus in steam tray above the inner pot and season with salt and pepper. Engage steam function and set timer to 30 minutes.

  1. I love to see simple recipes like this. I’m a truck driver this will be added to my must try list but I have sausage. That will be sautéed because that is what I have on hand. I will have to use spinach from a can. I’ll have to use aged cheddar slices instead of parmesan and whatever spices I have in my truck.
