Chickpea Soup


This soup recipe is healthy and wholesome, featuring yummy chickpeas that are high in protein and fiber. These along with a variety of vegetables and spices will leave you full and energized with good nutrients. Enjoy this hearty and delicious soup!

3 15 oz cans chickpeas
1 cup tomato, diced
2 carrots, sliced into thin rounds
1 zucchini, sliced into thin rounds
1/2 onion, chopped
4 tbsp extra virgin olive oil
4 cups water
1 tbsp basil
1 tsp salt
1 cup shredded parmesan cheese
1 tsp rosemary
1/2 tsp pepper
juice of 1 lemon

Servings: 6
Cooking time: 2 hours

Combine chickpeas, tomato, carrots, zucchini, onion, 2 tbsp extra virgin olive oil, water, basil, and salt in the inner pot of your Aroma Rice Cooker. Close lid and engage soup function, setting the time to 2 hours. In a bowl, combine parmesan cheese, 2 tbsp extra virgin olive oil, rosemary, pepper, and lemon juice. Cover and set aside. When soup is finished, serve warm and top with cheese mixture.
