Zucchini Bread

Zucchini bread has been surfacing in many kitchens for a couple years now because of its unique ingredient roundup. Zucchini, or really any veggies used in desserts is growing in great popularity for its health benefits and the natural sweetness that certain vegetables can effortless bring to a dish. No to mention, you can easily slide this to your kids and they’ll have no idea that they’re eating veggies! If the usual banana bread is losing its lackluster and you want to try something new, try this bread recipe on for size.

1 large zucchini
1 1/2 cups flour
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
3/4 cup sugar
1/3 cup vegetable oil
4 tbsp apple butter
1 1/4 tsp vanilla extract
2 large eggs
1/3 cup chopped walnuts

12-cup Digital Rice Cooker
8 servings
Prep Time: 20 minutes
Cook Time: 60 minutes

Coarsely grate the zucchini into a bowl; you should have about 1 1/2 cups grated zucchini. Whisk together the flour, cinnamon, baking powder, baking soda and salt in a medium bowl. Mix in the sugar, oil, apple butter, vanilla and eggs until you have a doughy mixture. Stir in the grated zucchini and nuts until evenly combined.

Pour the batter into your Aroma rice cooker and set it on the “Cake” or “White Rice” function, depending on your unit.

Coat with more walnuts if desired and serve while warm!
