Cool Ranch Chicken Bites

Get ready for the tastiest chicken bites you’ll ever eat. We’re talking super crunchy outer crust that’ll basically make you want to sing. Add the fact that the chips are ranch flavored?! It’s a home run, y’all. I promise everyone will be so impressed you’ll have to make this for every get together.

Ingredients
1.5 lbs boneless skinless chicken breast tenders
2 cups Cool Ranch Doritos
3/4 cup shredded Parmesan cheese
2 cups flour
salt and pepper, to taste
2 eggs
6 tbsp ranch dressing
olive oil nonstick spray

Directions
Cut the chicken into 1-inch, bite sized pieces; set aside

Crush up the tortilla chips to a fine crumble. Mix with the Parmesan cheese in a bowl and set aside.

In a separate bowl, beat the egg with the ranch dressing, salt, and pepper then set aside.

Season the flour with salt and pepper in a separate bowl.

Set up, in a line, the flour, then egg mix, then chip crumble. You are ready to start coating!

Dust a chicken piece with the flour being sure to shake off the excess. Next, dip it in the egg-ranch mixture, and then coat evenly with the tortilla chips. Place the breaded chicken onto the steam rack of the turbo oven. If needed, line the rack with aluminum foil so the chicken pieces don’t fall through. Repeat until all of the chicken is coated. If they do not all fit in the oven, cook in batches.

Lightly spray the tops of the chicken with the olive oil spray and bake for 10-12 minutes, flipping halfway through and spraying the new side with the olive oil.

When they are done, salt while still hot. Repeat until all of the chicken is done.
