Mini Cookies & Cream Cake

This cute, miniature dessert is simply perfect for when you have a hankering for something sweet but don’t want the tedious baking process that comes along with it. The small proportions make this dessert desirable but at the same time, makes just enough to quiet down that ever-so-persistent sweet tooth calling out to be satisfied. This recipe is as easy as combining a few ingredients, pouring it into your Aroma rice cooker, and relaxing while Aroma does all the work!

About 30 Oreos or any chocolate sandwich cookie
1 1/2 cups pancake mix
2 cups milk
1 tbsp of butter to grease
2 tbsp shortening
1/2 cup water
1 cup powdered sugar
2 tbsp sour cream

8-cup Digital Rice Cooker
6-8 servings
Prep Time: 5 minutes
Cook Time: 1 hour

For the Cake:
Put the cookies into a resealable bag, setting some aside to top your cake at the end, and smash until the cookies are completely broken down. (The mixture will be a bit wet because of the frosting, but it’s ok!) Mix the crushed cookies with the pancake mix and the milk. Grease your inner pot with butter and then add your cookie cake batter. Press the “Cake” function (if your rice cooker does not have the “Cake” function, simply use the “White Rice” function!) and let your rice cooker do its thing!

For the Frosting:
Mix together the shortening, water, powdered sugar and sour cream. Once your cake is cooked, remove it and let it cool. Drizzle the frosting to your liking! Add an additional handful of crushed chocolate sandwich cookies to the top of your cake.
