Pecan Pie Bars

Hello, and Happy New Year, everyone! Welcome to 2019 🙂

I’ve never been one of those people who comes up with a New Year’s resolution or thinks, “new year, new me”. I feel people tend to forget them after a month or so and lose motivation. I guess always have just thought if you’re going to try to change your life for the better, do it today. Start now. Why wait for the reasoning of it just being another year around the sun? I don’t know about you, but that’s not enough motivation for me to make things different. I need a reason that feels personal to me.

With that being said, every year I do choose a word to carry through my daily life for the next year. Instead of a change to my life and the way I do things, it’s about mindfulness and carrying some sort of intention through day-to-day life.

In 2018, my word was “listen”. Basically every day I just made a bigger effort to listen more and talk less. I think a lot of times, people just want to be listened to and understood. Have you ever had a conversation with someone and noticed they looked like they were daydreaming and off in another world? Doesn’t make you feel very good. People want to be heard and understood. The easiest way to do that is focus less on what you’re saying, and more on what they are.

You’ll be amazed what it does not only for yourself, but for them as well.

This year, I have chosen the word “accept”. Accepting things outside of my control has always been something I found difficult (frankly, I think a lot of people struggle with this too). Of course I’m not talking about every single little inconvenience that comes along. Usually it’s stuff that really, really stinks. For example, I had issues with my car last month and ended up getting around $1400 of unnecessary work done. I about had a mental break down, but what could I do? I stressed and stressed and cried a few times and thought “woe is me”. But what good did that really do? Absolutely nothing. The mechanics had no way of knowing what was wrong until they did all of that work. It needed to be fixed, it has about 130k miles on it, so it all made sense.

And as awful of a situation as that was, truly nothing was achieved by me spending hours and days upset about it. This year, in situations like that, my goal is to get upset and feel those emotions, but then “accept” the situation and not let it burden me.

But, if you are not like me and do have a resolution or want to get in better shape (good for you!), maybe put it off just one more day and take a minute to indulge in these pecan pie bars. I actually think they’re a great way to transition into a healthy lifestyle, because they are pretty sweet and heavy so you’ll only need a little piece to satiate your cravings.

Let’s take on 2019!

Bottom Layer::
1¾ cups flour
½ cup sugar
¾ cup butter, cold
Top Layer::
⅔ cup brown sugar, packed
⅓ cup + 1 tablespoon flour
4 eggs
1 tablespoon vanilla extract
pinch salt
1½ cups dark corn syrup
2 cups chopped pecans

Prep Time: 15 minutes
Cook Time: 1 hour 5 minutes

1. Line your casserole dish with parchment paper so it comes up the sides of the dish; this will make it easier to lift the bars out as a whole and cut on a cutting board. Spray any parts of the casserole dish not covered by parchment paper with nonstick spray.
2. Preheat the oven to 325℉.
3. Mix together the flour and sugar for the bottom layer in a bowl. Rub the butter into the flour mixture with your fingers until well incorporated and resembles a dry, coarse meal.
4. Press the crumb mixture firmly and evenly into the bottom of the prepared casserole dish.
5. Bake for 25-25 minutes; the edges should be just starting to brown.
6. While the crust is baking, mix together the flour and brown sugar for the top layer.
7. Whisk in the eggs, vanilla extract, salt, and corn syrup.
8. Let the mixture stand for 15 minutes until the crust is done prebaking.
9. Remove the casserole dish from the oven and set onto a heat safe surface.
10. Mix the chopped pecans into the top layer mixture, then pour over the partially baked crust.
11. Return the casserole dish to the oven and bake for an additional 40-50 minutes until the filling is set. Shake the dish a little the center can wobble a little like set jelly but should not be runny.
12. When done, remove from the oven and cool to room temperature. Once cool, set the casserole dish into the fridge and let set for a few hours.
13. Once firmed up, lift the cookies from the casserole dish by the parchment paper; lay them out on a cutting board.
14. Cut into 24 bars with a very sharp serrated knife. Serve and enjoy!
