Teriyaki Zucchini Noodles

Looking for the perfect (yet easy) recipe to make for date night this week? Or maybe trying to get a really (and I mean REALLY) early start on Valentine’s Day plans?

This dinner is so stinking fast and easy. And tasty. So, it’s the perfect way to impress your lover! Make them think you spent hours slaving over the stove, when in reality it was less than half an hour. If you want, you can make the zucchini noodles from scratch. Or save yourself even more time and buy them already made.

And you know what? If date night or Valentine’s Day isn’t your thing (or your partner just doesn’t like zucchini), you can make this dinner-for-two a single serving and eat it all yourself.

It’s veggies, so that’s fine. Right?

Ingredients
3 cloves garlic, minced
1 tablespoon soy sauce
2 tablespoons teriyaki sauce
2 tablespoons olive oil
1 pound fresh or frozen zucchini noodles
½ sweet yellow onion, chopped small
salt & pepper, to taste
fresh cilantro, chopped to garnish
sesame seeds, to garnish

20-cup Digital Multicooker with Sauté-then-Simmer STS®
2 servings
Prep Time: 5 minutes
Cook Time: 20 minutes

Directions
1. Set your Aroma multicooker for Sauté-then-Simmer STS® and let heat with the lid on for about 5 minutes.
2. While the cooker is heating, in a bowl combine the garlic, soy sauce, teriyaki sauce, and oil. Whisk it well with a fork.
3. Open the lid and add the zucchini noodles. Cook while stirring frequently using a long-handled wooden or heat safe spoon until just cooked but still crunchy, about 2 minutes. NOTE: If you are using frozen zucchini noodles, cook for about 5 minutes until all separated and cooked. There will likely be leftover water in the pot with the zucchini noodles. Turn the cooker off, use an oven mitt to lift the inner pot from the cooker, and carefully drain the excess water. Replace the inner pot to the multicooker and again set for Sauté-then-Simmer STS®.
4. Add the diced onion and cook briefly until they begin to soften and turn translucent, about 2 minutes.
5. Season with salt and pepper to taste, then add the sauce.
6. Stir all to combine with a long-handled wooden or heat safe spoon. Cook for an additional 2-5 minutes until the flavors are all incorporated.
7. Turn the cooker off. Scoop out into bowls and serve immediately with fresh cilantro and sesame seeds.
