Avocado & Hummus Quesadillas

I have this problem I like to call my “too much” gene. As in I never know when enough is enough and I always do too much. “Your eyes are bigger than your stomach” my grandfather used to say to me when I dished myself out way too much food for me to eat.

I was a kid then. And as an adult, not much has changed. I always put too much cheese on grilled cheese sandwiches (and yes, that’s possible). Too much dressing on salads. Too much sauce on pasta. Too many filings in tacos. And too much avocado on anything that I can put avocado on.

These quesadillas were no exception.

The first one I made I thought, “eh, heck with it I’ll just put a good healthy amount of avocado.” And you know what? Surprisingly it was too much. I KNOW you think how can there possibly be too much avocado in a quesadilla? But there was… warm avocado is not the best taste in the world.

So I tried again with just a few very thin slices and it was MUCH better.

So I know it’s tempting to use a lot of avocado. But try to tame you “too much” gene and remember that a little goes a long way with these quesadillas.

8 whole wheat fajita-size tortillas
8 ounces roasted red pepper hummus
2 teaspoons cumin
2 tablespoons cilantro, minced
1 avocado, each half cut into 12 slices
8 ounces queso fresco

Aroma Air Fryer
8 quesadillas
Prep Time: 10 minutes
Cook Time: 10 minutes per batch of two

1. Take one of the tortillas and spread about 2 tablespoons of hummon over the whole thing, keeping a little bit of space on the edges.
2. Sprinkle some cumin and cilantro over the hummus.
3. On one half of the tortilla, place three slices of avocado. You want the slices to be thin; trust me in this case more is not always better!
4. Sprinkle about 2 tablespoons of queso fresco over the avocado. Fold the tortilla in half so it is a half circle.
5. Place the quesadilla into the cooking pan of the air fryer so the straight edge is in the middle.
6. Repeat steps 1-4 to make another quesadilla, then place in the air fryer with the other so their two straight edges are facing each other.
7. Close the lid. Set the air fryer to MED and the timer to 6 minutes. After the timer goes off, carefully flip the quesadillas over and cook for another 6 minutes. Remove from the air fryer.
8. Repeat making and cooking the tortillas until all of the ingredients are gone and the quesadillas are cooked.
